Rice & Peas

This recipe for brown rice and peas uses coconut milk which makes it very creamy and delicious. I usually make a pot of this rice during the weekend and it serves as a side dish for many meals during the week. It also freezes very well if you prepare more than needed for the week.

Ingredients

  • 1 cup coconut milk
  • 1 cup water
  • 1 cup brown rice
  • 1/2 can of Goya Green Pigeon Peas
  • 1 pinch of salt
  • 1 -2 thin scallions

Directions

  • Bring water and coconut milk to boil. Add salt.
  • Rinse brown rice.
  • Add rice, peas and scallions to pot and bring back to boil. Lower heat, cover and simmer for 40 minutes.
