This recipe for brown rice and peas uses coconut milk which makes it very creamy and delicious. I usually make a pot of this rice during the weekend and it serves as a side dish for many meals during the week. It also freezes very well if you prepare more than needed for the week.
Ingredients
- 1 cup coconut milk
- 1 cup water
- 1 cup brown rice
- 1/2 can of Goya Green Pigeon Peas
- 1 pinch of salt
- 1 -2 thin scallions

Directions
- Bring water and coconut milk to boil. Add salt.
- Rinse brown rice.
- Add rice, peas and scallions to pot and bring back to boil. Lower heat, cover and simmer for 40 minutes.
